Marron glace is a famed confection consisting of specially selected chestnuts encased in sugar syrup and glazing. The labor-intensive presentation, which results in the chestnuts shimmering as if encrusted in translucent ice, has no doubt played as much a part as flavor in making marron glace seen not just as a candy, but as cuisine. In their own Marron Glace, Savinelli makes just as fine a presentation of their signature shapes, dark in finish, and sporting glistening, ripple-patterned acrylic stems.
